INDIGENOUS CHEESE OF THE UPPER SOČA VALLEYTOLMINC

Cheese Tolminc with a protected designation of origin is one of the most recognized Slovenian indigenous products. All stages, from the production of fodder, milk production, to the production of cheese, must take place in the area of the Upper Soča Valley. Only by following the exact specification of the so-called Specification of the Tolminc cheese production, cheese can carry a national and European sign of the protected designation of origin.

Cheese Tolminc with a protected designation of origin is hard, whole cheese. It is made from thermised cow’s milk.

Its flavour is characterised by climatic and geological conditions of mountainous areas of the Soča region, the breed and the way of cattle breeding. With at least two months of maturing on wooden shelves, the flavour becomes more and more intense, rich and aromatic. Cheese on wooden shelves is daily manually turned.

A wheel of Tolminc cheese weighs about 4 kg. It is also vacuum packed.
