Organic cheese is made of organically produced, non-homogenised and pasteurised whole milk from the Upper Soča Valley. It is a semi-hard, full-fat cheese produced by soft cheese technology.
Cross-section has no eyes in or they are small and rare. It ripens for 21 days, under controlled conditions on wooden shelves.

A wheel of cheese weighs about 600 g.
