Sir Kober, made according to the technology of soft cheeses, is made from pasteurized, non-homogenized, whole milk, has a rich, full flavour, is light yellow in colour, with a soft, elastic texture and a gentle, milky taste. Cross-section has no eyes in or they are small and rare. It ripens for 21 days, under controlled conditions on wooden shelves., where it is daily manually rotated.
When it ripens, it is waxed with a dark brown wax. Waxing protects cheese against moisture loss, while a richer and more intense aroma is formed.
A wheel of cheese weighs about 650 g.
