The dairy Mlekarna Planika lets a select part of Tolminc cheese mature for a longer time. In cases when it matured on the wooden shelves in the maturing shack for at least 1 year, it is sold under the name “1 year old Tolminc”.
During the process of maturing, cheese loses humidity. This is reflected in the texture, which grows harder and more breakable with age. At the same time, the flavour and aroma of the cheese grow more intense as it ages.
It comes in a gift box, vacuum-packed by piece, at a weight of about 300 g.
